Here is a bit of a summary of some of the stars of these products and their nutritional benefits:
Mushrooms: Fantastic source of fibre, B vitamins for a healthy nervous system and essential minerals such as zinc, selenium and iron. Also a source of Vitamin D, important for healthy bones and a robust immune system.
Chickpeas/black beans: Exceptionally high source of fibre, protein and minerals, chickpeas and black beans also contain particular plant antioxidant compounds. Their high fibre and starch content supports digestion and blood sugar balance.
Leeks: A great source of fibre, vitamin and mineral rich and particularly helpful as a food to feed the healthy bacteria in the gut.
Hemp seeds: A well balanced plant form of essential fatty acids, hemp is a great veggie option of both Omega 6 and Omega 3 oils. They also supply a good amount of protein and a wealth of vital minerals including zinc, copper, magnesium, iron and manganese.
Corn: Rich in B vitamins and high in fibre, corn also contains high levels of the protective antioxidants, lutein and zeaxanthin, which are the two carotenoids that are very protective to the eyes.
