Cauliflower, Turmeric & Ginger Happiness Cups

Method

Place all the tomato salsa ingredients in a bowl and stir to combine. Set aside.
Whisk all the tahini sauce ingredients in a small bowl and set aside.
Heat a large frying pan on medium heat. Meanwhile chop patties roughly into quarters and roll into balls or just cook as chunks. Add olive oil and heat. Fry the balls in batches until golden brown.
Place the lettuce leaves on a plate. Place hummus, salsa and Happy Patty pieces inside and drizzle with tahini sauce.
Alternatives: Replace the lettuce with toasted pita breads for a more filling option. Replace the tahini with 1/4 cup of yoghurt to create a yoghurt sauce.

  • 400g Cauliflower, Turmeric & Ginger Happy Patties, quartered (roll into balls if preferred)
  • Olive oil
  • Lettuce leaves (iceberg, baby cos or baby gem) to serve
  • Hummus (make your own or use store bought) to serve
  • Tomato salsa ingredients:
  • 200g cherry tomatoes, diced
  • 2 Tbsp red onion, finely chopped (optional)
  • 1 cup cucumber, diced
  • 1 spring onion, finely sliced
  • 3 Tbsp coriander, chopped
  • 2 tsp olive oil
  • 1/2 lemon or lime, squeezed
  • Salt and freshly ground pepper, to taste
  • Tahini sauce ingredients:
  • Juice of a lemon
  • 2 Tbsp tahini
  • A little water to loosen
  • Salt and freshly ground pepper, to taste
