Chorizo Super Sausie Tray Bake

Full of flavour and freshness, this is a one dish wonder that will leave you feeling like you’ve been cruising around the Med but with all the ease and happiness of home.


Preheat oven to 200ºC . In a large roasting pan, place onions, garlic, fresh herbs, and olive oil and roast for 20 minutes until starting to colour. Meanwhile, heat a little oil in a frying pan over medium heat. Cook the Chorizo Super Sausies until caramelised all over about 3-4 minutes. Remove from the pan and place in the roasting tray with the roasted onions and herbs. Add balsamic vinegar, tomatoes and season to taste. Roast for another 20 minutes or until the tomatoes start to caramelise.


  • 1-2 large onions, red or white, cut in half, then cut each half into 8 wedges
  • 2 garlic bulbs, cut in half across the middle
  • 2-3 sprigs of rosemary
  • 2-3 sprigs of thyme or oregano
  • Olive oil
  • 330g Food Nation Chorizo Super Sausies
  • 250-300g vine tomatoes
  • 2 tbsp balsamic vinegar
  • Salt and pepper
