Mexican Corn Fritters with Chipotle Mayonnaise


Blend all the mayonnaise ingredients until smooth. Refrigerate until ready to use.

Heat oil in a large frying pan over medium heat. Roll the Mexican mince into balls and press slightly with the palm of your hand to create a fritter. Cook until golden brown on both sides and serve hot with the chipotle mayonnaise. Garnish with coriander and chilli.


  • 1/2 c mayonnaise
  • 1/4 c sour cream
  • 2 Tbsp of chipotles in adobo sauce
  • 2-3 Tbsp freshly squeezed lime juice
  • Salt and pepper to taste
  • Oil
  • 500g Mexican Corn & Capsicum Magic Mince
  • Coriander leaves, to garnish
  • Thinly sliced red chilli, to garnish
