A super quick and easy way to turn Mexican Magic Mince into a Fiesta – tasty but simple to make
Thinly slice the red onion, put in a small bowl with cider vinegar and caster sugar for 30 minute, until onion turns pink
Heat a large frying pan, add olive oil and when hot, add Food Nation Mexican Magic Mince. Break up with a wooden spoon and cook until golden brown.
While cooking, place corn chips on a platter or board and prepare the other ingredients. When the Magic Mince is golden brown add a tablespoon of mixture to each mini tostada, top with the avocado, pickled red onion, coriander and chilli and finish with a squeeze of lime. Delicious!
