Moroccan Carrot Salad with Mushroom & Hemp Magic Mince

Fresh and tasty, this is a winner throughout the year with the Magic Mince making it a one dish wonder.  We rather like some hot crusty bread on the side.


Place dressing ingredients in a small bowl or jar and mix to combine.

To cook the Magic Mince, heat oil over a medium to high heat, add the  mince, cumin, smoked paprika, chilli flakes. While this is cooking, make the salad by combining the carrot, spinach, coriander and spring onion in a salad bowl and toss through the dressing. When the Magic Mince is browned and starting to caramelise and crisp up, take off the heat and set aside. Toss through the salad and serve with almonds, feta and a sprinkling of fresh coriander.

  • 6T oil
  • zest and juice of a lemon
  • 1/2 t Turmeric
  • 1/2 t cumin
  • 1/4 t salt
  • 1/4 t ground pepper
  • Magic Mince
  • 4 T oil
  • 300gm Mushroom & Hemp Magic Mince
  • 1 1/2 t ground cumin
  • 3/4 t smoked paprika
  • 1/3 t chilli flakes
  • Salad
  • 2 c peeled and julienned carrot
  • 1 c roughly chopped spinach
  • 1/3 c roughly chopped coriander
  • 2 spring onions finely sliced(white and green parts)
  • Garnish
  • Toaste Almond or pumpkin seeds
  • Feta cheese crumbled
  • Coriander - roughly chopped
