Spicy Mushroom & Hemp Larb

Like or love Larb, this recipe is a total winner. All the fresh, zingy flavours of herbs and spices combined with the goodness of the Mushroom & Hemp Magic Mince.

Method

Heat a splash of oil over medium heat, add Mushroom & Hemp Magic Mince, cook until starting to brown. While this is cooking, make the sauce by combining the garlic, ginger, soy sauce, lemon juice and sugar in a small bowl.

Once the Magic Mince is browned, add sauce and cook a further few minutes until the liquid has absorbed and the Mince is starting to crisp.

Take off the heat. Add most of the coriander, mint and spring onions and mix through. Place the Magic Mince Larb mixture in the lettuce cups and sprinkle with the remaining herbs, chilli, peanuts and ground rice.

Ingredients

  • 300g Mushroom & Hemp Magic Mince 
  • 2 Tbsp Cooking Oil
  • 2 cloves garlic
  • 1 1/2 tsp finely grated ginger
  • 1 Tbsp soy sauce
  • 4 Tbsp lemon or lime juice
  • 1 Tbsp brown sugar (or caster or coconut sugar)
  • Baby Cos, Butter or Iceberg lettuce leaves
  • 3 Tbsp fresh mint, fresh coriander, roughly chopped
  • 4 spring onions, finely sliced
  • 1 red chilli, finely sliced 
  • ½ cup roasted peanuts finely chopped
  • 1 Tbsp basmati rice (toast in a hot dry pan for 8-10 mins until gold brown, then grind) optional
