Mushroom & Hemp Magic Mince balls with Mushrooms and Thyme

Method

Shape the Mushroom & Hemp Magic Mince into walnut-sized balls

Heat a frying pan on medium heat, add the olive oil and onion, cook until onions are soft, add the garlic, chilli flakes and the Mushroom & Hemp balls. Cook for a few minutes until the Magic Mince Balls are starting to colour, then adding the mushrooms and thyme.

Fry until the moisture from the mushrooms has cooked off, and the balls have a nice golden colour. Add more olive oil if necessary. Season with salt and freshly ground pepper.

Drain your pasta, reserving about 2-3 tbsp of the hot pasta water to add to the spicy mushroom pan. Add the butter, toss and then add the pasta and reserved cooking water. Serve sprinkled with parmesan, parsley and black pepper.

Ingredients

  • 300g Mushroom & Hemp Magic Mince 
  • 250g Mixed Brown and White Button Mushrooms, sliced
  • 1 Tbsp olive oil
  • 1 onion, peeled and finely chopped
  • 2 cloves of garlic, peeled and finely chopped
  • 1/4-1/2 tsp chilli flakes
  • 2-3 Tbsp fresh thyme leaves 
  • 400-500g pasta of your choice, cooked as per packet instructions
  • Tbsp of butter
  • 1/2 cup of fresh grated Parmesan 
  • 2-3 Tbsp of fresh parsley leaves 
  • Freshly ground black pepper
