Mexican Tostada Stack

Stack it up as high as you can with all the goodies and enjoy this taste extravaganza of Mexican deliciousness. PS. You only need one Tostada at a time but we rather liked the stack for this photo.

Method

Heat a large frying pan, add a few tablespoons of olive oil and when hot, add Food Nation Mexican Magic Mince. Break up with a wooden spoon and cook until golden brown.

While cooking, place tostadas on a plate and prepare garnish ingredients. Make guacamole by mashing the avocados, add red onion, tomato, lime juice, coriander and sauce. Stir until combined and season to taste. When the Mexican Magic Mince has caramelised, place a large spoonful on top of the tostada, add a few strips of carrot, pickled red onion and a generous dollop of guacamole. Garnish with red chilli, sour cream sauce and fresh coriander leaves.

Ingredients

  • 300g packet of Food Nation Mexican Mince 
  • Pack of Tostadas
  • 2 avocados
  • 1/4 red onion, finely diced 
  • 1 tomato, deseeded and finely diced
  • juice of a lime or lemon
  • 2 Tbsp fresh coriander, chopped
  • Tobasco or chipotle sauce (optional)
  • 1 carrot, peeled and finely sliced or julienned
  • 1/4 red onion, thinly sliced and pickled in a little cider vinegar and caster sugar for 30 minutes until pink
  • 1 red chilli, finely sliced
  • a handful of fresh coriander leaves
  • sour cream mixed with a little lime zest and juice, salt and pepper
