Mushroom & Hemp Mince Pizza

Feeds: Makes 4 large pizzas

Method

Put the garlic, chilli and fennel seeds into a bowl with the ricotta and stir together with some salt and pepper to taste.

Heat the oven to 240C. Transfer pizza bases to 2 baking trays or pizza stones. Spread the bases with the chilli ricotta mixture, followed by the mozzarella and parmesan then scatter over the broccoli and spread the Magic Mince around on top in little clumps. Scatter with a pinch more chilli flakes and fennel seeds, then drizzle with a little more olive oil. Bake the pizzas for 10-15 minutes until the base is crisp and golden.
Alternative: Use a tomato sauce base instead of the ricotta mix, sprinkle over chilli flakes and fennel seeds, mushroom mince and pizza cheeses. Bake and top with fresh rocket or spinach.

  • Pizza dough
  • 3 cloves garlic, crushed
  • 1/4 tsp chilli flakes
  • 1/4 tsp fennel seeds
  • 125g ricotta (or vegan alternative)
  • 500g Mushroom & Hemp Magic Mince
  • 6 stalks long stem broccoli, cut and blanched
  • 250g mozzarella, grated or broken into pieces
  • 1/4 c freshly grated parmesan cheese (or alternatively use pizza cheese)
  • Olive oil
